I’ve been adjusting to Utah, it’s been nice being closer to family, being a part of the lives of my nieces and nephews.  I’ve had some health issues recently, but I am quickly recovering and back on my feet.

Recently, I was watching Rachel Ray show with Montel Williams as a guest. He was diagnosed with Multiple Sclerosis 14 years ago, and the doctors said he would be in a wheel chair in 5 years. Not only is he not in a wheel chair, but he still enjoys outdoor sports like snowboarding! He is truly inspirational, what is his secret?

He drinks 2 green smoothie drinks a day, for breakfast and lunch, and then he eats a regular dinner.

The greens and berries have powerful antioxidant and anti-inflammatory properties, which inflammation is the root of all diseases. He is fit with vitality and energy, he even has six pack abs! Fresh foods do have the power to heal.

So, I figured I’d give it a whirl, I can do smoothies, they are quick and easy, and most of us aren’t getting enough greens, so here’s my favorite green smoothie recipe.

  • 1 large handful of fresh spinach or other greens like chard or kale
  • 2 Tbs. protein powder
  • 2 cups almond milk or coconut water
  • ½ cup pineapple
  • 1 cup berries ( frozen berries are fine)

Blend in the blender and enjoy the rejuvenating, fresh nectar. You don’t even taste the greens. Of course you can vary the recipe with other fruits. I often add a banana, which makes it a bit creamier.

I’m doing the smoothie challenge, who is with me?  Try it out for a week and see if you feel healthier. Its been about day 4 for me, and already I’ve had comments that my skin is taking on a healthier glow.

Since writing this article, I’ve made smoothies of all kinds a regular part of my healthy lifestyle. I love that they are convenient – breakfast in 5 minutes, tons of recipes that you can change up for anti-inflammatory effects, antioxidants, flavors and nutrition.
