Coconut Milk Tapioca Pudding Dairy Free Recipe
This is one of my favorites. Healthy lifestyle, allergen free living and easier natural weight loss doesn’t have to be a bore – it can be delicious!
This creamy, delectible treat is dairy free, gluten free and low glycemic and it’s quick and easy to make.
It combines the goodness of coconut milk, a low glycemic food, with a little sweetener and tapioca for an all season favorite treat. Layer with fresh berries for antioxidants and extra goodness.
1 Can Coconut Milk or Lite Coconut Milk
3 Tsp. Tapioca Pearls
3 Tbs. Sugar or 2 Tbs. Agave Syrup
Combine ingredients in a sauce pan and cook on medium heat on the stove. Bring to a boil, and boil 1 minute. Pour into serving dishes and chill. Enjoy!
Makes 3 servings, about 60 calories per serving.

Coconut milk is rich in lauric acid, a medium-chain fatty acid that is abundant in mother’s milk. According to the National Center for Biotechnology Information, lauric acid has many germ-fighting, anti-fungal and anti-viral properties that are very effective at ridding the body of viruses, bacteria and countless illnesses. Lauric acid may also reduce cholesterol and triglyceride levels, which lowers heart disease and stroke risks. There are only a few foods that are rich in lauric acid, so drink coconut milk regularly to benefit from this nutrient.
Coconut milk makes a great substitute for milk, use it to replace milk in any recipe. Use it on cereal, in your smoothie, chocolate pudding, cream fillings, really any recipe that calls for milk. It’s luscious, nutritious and doesn’t have the inflammatory effect that dairy products have.
