Chicken~ Brussel Sprouts~ Cranberries, 15 Minute Recipe

I love recipes that only take 15 minutes or less, that  are quick and easy, healthy and satisfying. Here’s my 15 minute Chicken and Brussel Sprouts with Cranberries.

  • 1 cup of frozen chicken tenders
  • 1 tsp. olive oil
  • 1/2 cup water
  • 1/4 cup dried cranberries
  • 1 tsp. dried onions

In a fry pan, add 1 tsp. olive oil and frozen chicken pieces ( I use the chicken tenders as the smaller pieces cook faster), add 1/2 c. water and let sit on medium heat for 10 minutes covered, stirring a couple of times.

While the chicken is cooking, cut brussel sprouts in half, add to the fry pan along with the cranberries and stir. If the pan is dry, add just a touch more water, let steam for 5 minutes more or until the brussel sprouts are tender and the chicken is cooked.

Sprinkle with dehydrated onions and sea salt.
